About this recipe
Spanish gazpacho is a raw vegetable soup that cools you down on hot days and needs no cooking at all. Blended with olive oil, the tomatoes and cucumber offer a vitamin-rich, low-calorie option.

Chop the tomatoes, cucumber and pepper into large pieces.

Break the stale bread into small pieces and soak in water for a few minutes.

Place all the vegetables, garlic and soaked bread into a blender.

Add the olive oil, vinegar, salt and black pepper.

Blend on high speed until completely smooth.

Adjust the consistency by adding cold water if needed.

Chill in the fridge for at least 2 hours and serve cold.
Tips
- For a deeper flavour, you can marinate the tomatoes overnight.
- Serve topped with chopped cucumber and a drizzle of olive oil.
- Leave out the bread for a lighter, gluten-free version.
