About this recipe

These fresh Vietnamese spring rolls are a light, no-cook vegan snack packed with tofu, crunchy vegetables and fragrant herbs. Wrapped in translucent rice paper and served with a creamy peanut dipping sauce, they make a refreshing lunch or appetizer.

Method

  1. 1

Cook the rice vermicelli per package, rinse under cold water and drain.

  2. 2

Pan-fry the tofu strips with tamari until golden, then let them cool.

  3. 3

Whisk the peanut butter, lime juice, maple syrup and a splash of water into a smooth sauce.

  4. 4

Fill a shallow bowl with warm water.

  5. 5

Dip one rice paper wrapper in the water for 10-15 seconds until pliable.

  6. 6

Lay lettuce, noodles, tofu, carrot, cucumber and herbs on the lower third.

  7. 7

Fold in the sides and roll it up tightly like a burrito.

  8. 8

Repeat with the remaining wrappers and serve with the peanut sauce.

Tips

  • Keep the finished rolls under a damp towel so they don't dry out.
  • Use tamari instead of soy sauce to keep the rolls gluten-free.
  • Add a little sriracha to the peanut sauce for a spicy kick.
