Vegetable Japchae – Korean Vegan Glass Noodles

Method

   Boil the glass noodles according to the package instructions, drain and cut into large pieces with scissors.

   Blanch the spinach in boiling water for 30 seconds, transfer to cold water and squeeze out the excess.

   Heat the olive oil in a large pan over medium heat.

   Add the onion and garlic and sauté until softened.

   Add the carrot, bell pepper and mushrooms and sauté for 4-5 minutes.

   Add the boiled noodles, spinach, soy sauce, sesame oil and maple syrup.

   Toss and heat all the ingredients together for 2-3 minutes.

   Sprinkle with toasted sesame seeds and serve hot or warm.
