About this recipe

Tteokbokki is one of the most beloved dishes of Korean street food. Cylindrical rice cakes called garaetteok are simmered in a sweet-spicy sauce built on gochujang (red chili paste).

The classic recipe adds sliced fish cake (eomuk) and green onion alongside the rice cakes. The sauce gains deep umami as gochujang, chili flakes, sugar, and soy sauce meet an anchovy or dashi broth.

The rice cakes provide complex carbohydrates while the fish cake adds protein. In a homemade version you can reduce the sugar and add plenty of vegetables for a more balanced meal.

Method

    If the rice cakes are firm, soak them in warm water for 10 minutes to soften.

    In a small bowl, mix the gochujang, gochugaru, sugar, soy sauce, and garlic to make the sauce.

    Bring the water or anchovy stock to a boil in a wide pan.

    Add the prepared sauce and stir until dissolved.

    Add the rice cakes and cook over medium heat for 5 minutes.

    Add the sliced fish cakes and keep cooking for 5-7 minutes until the sauce thickens.

Tips

  • Using anchovy or dashi stock adds deep umami to the sauce.
  • If the sauce gets too thick, add a little hot water to adjust the consistency.
  • Add a boiled egg or ramen noodles to make the meal more filling.
