About this recipe

Tabbouleh is a herb-forward salad where parsley is the star and bulgur plays a supporting role. The lemon and olive oil keep it fresh and light, making it a perfect side or a guilt-free snack.

Method

  1. 1

Rinse the fine bulgur, then soak it in a little warm water for 10 minutes until just tender.

  2. 2

Wash and thoroughly dry the parsley and mint, then chop them as finely as you can.

  3. 3

Finely dice the tomatoes and thinly slice the scallions.

  4. 4

Drain the bulgur well and gently squeeze out any excess water.

  5. 5

In a large bowl, combine the bulgur, parsley, mint, tomato and scallion.

  6. 6

Whisk the lemon juice, olive oil, salt and pepper, then pour over the salad.

  7. 7

Toss well, sprinkle with sumac and let it rest 10 minutes before serving.

Tips

  • Dry the herbs completely so the salad stays crisp and does not turn soggy.
  • Use fine bulgur; coarse bulgur needs longer soaking and changes the texture.
  • Add the dressing just before serving to keep the parsley bright green.
