Bulgogi, one of Korea's most beloved dishes, is made in this fit version with lean beef tenderloin and a low-sugar marinade. Combined with fresh vegetables and a measured portion of rice, it delivers a high-protein, balanced meal ideal for active people.
Prepare the marinade by mixing soy sauce, sesame oil, garlic, ginger and honey in a bowl.
Add the thinly sliced beef to the marinade and let it rest for at least 15 minutes.
Heat a large pan over high heat and lightly grease it with a little oil.
Lay the marinated beef in a single layer and cook for 2-3 minutes until the edges caramelize.
Flip the beef and cook for one more minute, then remove from the pan.
In the same pan, sauté the carrot julienne for 1-2 minutes.
Divide the cooked brown rice between the bowls.
Top with the bulgogi beef, sautéed carrot and steamed spinach.
Garnish with spring onion, toasted sesame and black pepper, then serve.
