About this recipe

Ribollita is a rustic Tuscan soup that turns beans, greens and day-old bread into a hearty, satisfying bowl. It is high in fibre, naturally vegan and tastes even better the next day.

Method

  1. 1

Heat the olive oil and sauté the onion, carrot and celery until softened.

  2. 2

Add the garlic and cook for another minute.

  3. 3

Add the tomatoes and vegetable broth and bring to a simmer.

  4. 4

Add half the beans whole and mash the other half before stirring it in to thicken the soup.

  5. 5

Add the kale and cabbage and simmer for 20 minutes.

  6. 6

Season with salt, pepper and thyme.

  7. 7

Stir in the torn bread and cook until it softens and soaks up the broth.

  8. 8

Let it rest for 10 minutes, drizzle with olive oil and serve.

Tips

  • It is traditionally made with day-old stale bread, so it is perfect for using up leftovers.
  • It tastes even better the next day once the flavours have had time to meld.
  • Use cavolo nero (Tuscan kale) for the most authentic, earthy flavour.
