Greek Salad (Horiatiki) – Tomato, Cucumber and Feta contains 235 calories per serving: 7 g protein, 10 g carbohydrate and 20 g fat. It takes 15 minutes in total and makes 4 servings.
Horiatiki, meaning "village salad," is one of the best-loved dishes of Greek cuisine and a summer-table staple. It contains no lettuce; its true stars are sun-ripened tomatoes and the slab of feta laid whole on top.
The salad is a healthy example of the Aegean and Mediterranean diet. The abundant fresh vegetables supply fiber and vitamin C, while extra virgin olive oil and feta provide satisfying healthy fats and calcium. It is ideal for anyone seeking a low-carb, vegetarian meal.
Because nothing is cooked, the nutrients stay intact; all you need to do is choose quality ingredients and plate them in balance.
Cut the tomatoes into large wedges and place them in a wide bowl.
Half-peel the cucumber, slice it into thick pieces and add it in.
Cut the green pepper into rings and add to the bowl.
Thinly slice the red onion and scatter it over the vegetables.
Dot the Kalamata olives throughout the salad.
Drizzle over the olive oil and vinegar, sprinkle with salt and toss gently.
Lay the block of feta whole on top, sprinkle with dried oregano, add a final drizzle of olive oil and serve.
