About this recipe

Doenjang jjigae is a staple fermented soybean paste stew on Korean tables, offering deep, umami-packed flavor. This vegan version uses vegetable broth instead of meat stock for a lighter yet nourishing dish.

Method

  1. 1

Heat the sesame oil in a pot over medium heat and sauté the onion and garlic for 2 minutes.

  2. 2

Add the vegetable broth and stir in the doenjang paste until it dissolves.

  3. 3

Add the potato cubes, bring to a boil and cook for 8 minutes.

  4. 4

Add the zucchini, mushrooms and Korean chili flakes and cook for another 5 minutes.

  5. 5

Gently add the tofu cubes, stirring lightly so they don't break apart.

  6. 6

Add the green chili and simmer for another 5 minutes over low heat.

  7. 7

Check the seasoning; since doenjang is salty, add very little salt if needed.

  8. 8

Add the scallions just before removing from the heat.

  9. 9

    Serve hot, alongside steamed rice.

Tips

  • For extra umami depth, steep a few slices of dried shiitake mushroom in the vegetable broth.
  • For a thicker consistency, mash some of the potato and stir it back into the stew.
  • Doenjang varies in saltiness between brands; taste the broth before adding any salt.
