About this recipe

Bibim guksu is one of Korea's most beloved summer noodle dishes and comes together in minutes. A sweet-spicy gochujang sauce balances crunchy vegetables and a protein-rich egg for a refreshing, well-rounded meal.

Method

  1. 1

Boil the eggs for 8 minutes, transfer to cold water, peel and halve them.

  2. 2

In a small bowl, whisk together the gochujang, apple cider vinegar, soy sauce, sesame oil, honey and garlic to make the sauce.

  3. 3

Cook the noodles according to package instructions, about 3-4 minutes.

  4. 4

Drain the noodles and rinse under ice-cold water to remove the starch.

  5. 5

Transfer the drained noodles to a wide bowl and add the prepared sauce.

  6. 6

Add the cucumber and carrot and toss the noodles well with the sauce.

  7. 7

Divide into portions and place the boiled eggs on top.

  8. 8

Garnish with toasted sesame seeds and fresh scallions and serve immediately.

Tips

  • Rinsing the noodles in ice water keeps them from sticking and gives a crisp texture.
  • To reduce the heat, halve the gochujang and add a little more honey for sweetness.
  • For extra protein, top with grilled tofu or edamame.
