About this recipe

Baked instead of fried, these chickpea falafel sit over crisp greens, tomato and cucumber for a light yet filling vegan bowl. A creamy tahini-lemon dressing ties everything together while keeping the meal plant-based and high in fiber.

Method

  1. 1

Preheat the oven to 200°C and line a tray with parchment paper.

  2. 2

Blend the chickpeas, onion, garlic, parsley, cumin and coriander into a coarse mixture.

  3. 3

Stir in the chickpea flour, salt and pepper, then shape into 8 small patties.

  4. 4

Place on the tray, lightly spray with oil and bake 20-25 minutes, flipping halfway.

  5. 5

Whisk the tahini with lemon juice and a little water until smooth.

  6. 6

Arrange the greens, tomato and cucumber in two bowls.

  7. 7

Top with the baked falafel and drizzle with the tahini dressing.

Tips

  • Use dried soaked chickpeas for a firmer falafel if you have time.
  • Chill the mixture for 15 minutes so the patties hold their shape.
  • Thin the tahini dressing with extra water until it is pourable.
