About this recipe

Gigantes plaki is a traditional Greek dish where giant beans slowly bake with tomato, olive oil and oregano. Rich in plant protein and fiber, this vegan recipe offers a filling and low-calorie option.

Method

  1. 1

Boil the soaked beans in plenty of water for 40-45 minutes until tender, then drain.

  2. 2

Heat the olive oil in a wide pan and sauté the onion and carrot for 5 minutes.

  3. 3

Add the garlic and cook 1 more minute, then stir in the tomato paste until fragrant.

  4. 4

Add the chopped tomatoes, oregano, sugar, salt and pepper, and simmer for 10 minutes over low heat.

  5. 5

Add the boiled beans to the sauce and stir gently, adding a little cooking water if needed.

  6. 6

Transfer the mixture to a baking dish and bake in a preheated oven at 180°C for 35-40 minutes.

  7. 7

Remove from the oven, sprinkle with fresh parsley and serve warm.

Tips

  • Soaking the beans overnight shortens cooking time and gives a creamier texture.
  • Add a pinch of chili flakes or some lemon zest to enrich the aroma.
  • It tastes even better the next day and keeps in the fridge for up to 3 days.
