Aloo Gobi is a simple yet deeply flavorful dish where potatoes and cauliflower meet aromatic Indian spices. It is prepared with little oil, is rich in fiber and plant protein, and makes a perfect choice for lunch or dinner.
Method

Wash the potatoes and cauliflower and cut them into medium pieces.

Heat the olive oil in a pan over medium heat, add the cumin and toast until fragrant.

Add the ginger and garlic and sauté for 30 seconds.

Add the turmeric, ground coriander and chili powder and stir.

Add the potatoes, coat them in the spices and cook for 5 minutes.

Add the cauliflower and salt, cover and cook over low heat for 15 minutes.

Garnish with fresh coriander leaves and serve hot.
Tips
- Do not stir the vegetables too much so the pieces brown lightly without falling apart.
- For less oil, you can lightly steam the vegetables first.
- Those who like heat can add a pinch of red pepper flakes before serving.
