Method

    Skim the thick cream from the top of the coconut milk and fry it with the curry paste in a pot until fragrant.

    Add the chicken pieces and sauté until coated all over with the curry.

    Pour in the remaining coconut milk, add the cinnamon stick and cardamom, and bring to a simmer.

    Add the potatoes, onion and peanuts, then cook over low heat for 25 minutes.

    Stir in the fish sauce, palm sugar and tamarind paste, adjusting the salty-sour-sweet balance.

Tips

  • Frying the curry paste in the coconut cream first noticeably deepens the aroma.
  • If you can't find tamarind, a little lime juice gives a similar sourness.
